Garden Salad
Dressing:
1/2 small onion, coarsely chopped
3 tablespoons sugar
1/2 teaspoon celery seed
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 cup catsup
1/4 cup salad oil
3 tablespoons vinegar
1 Garlic clove (optional)
Place all ingredients except garlic in a food processor or blender until well combined. Add garlic, if desired. Refrigerate, covered until serving time.
Salad:
1 cup chopped cucumber
1 cup chopped tomato
1/2 cup sliced green onions
1/2 cup sliced radishes
1/2 cup shredded carrot
Combine all ingredients and pour 1/2 cup of the dressing over the salad and toss. Store any remaining salad dressing in the refrigerator for up to two weeks. Makes 6 to 8 servings.
